SAUCE PRODUCTION LINE Sauce is a kind of paste produced by homogenizing various ingredients and obtaining a fluid structure in order to change the aesthetic and taste perception of the food and give it flavor. PROCESSES While producing sauce, two different process methods are used depending on the structure of the sauce made; Hot Process and Cold Process. HOT PROCESS: It is the method of raising the food and materials used when producing sauce to high temperatures in order to stop the enzyme activity in them, reduce the microbial load and maintain the desired consistency. Ketchup, Barbecue Sauce, Hot Sauce, Sweet & Sour Sauce, etc. COLD PROCESS: It is the method of processing the food and materials used when producing sauce without being exposed to high temperatures.
